Mike Gaboury Jr.


Highly motivated and goal-driven, Mike Gaboury Jr. is the founder and owner of Jerky Jr’s Smokehouse in Wolfe City, Texas. Equipped with a traditional family jerky recipe dating back over 100 years and his one of a kind skill set, Mike has a solid foundation on what it takes to deliver outstanding meals that leave lasting impressions.


Born and raised in Coeur d’ Alene, Idaho, Mike has always had a longing passion for entrepreneurship, cooking, and being outdoors. In his younger years, he often sold and delivered jerky via bicycle, proving he had the business ownership mindset fostering at an early age. 


After graduating high school, he enlisted in the United States Air Force and served for eight years as a Security Forces Member. He selflessly and proudly served his country until he was medically retired in 2016. After retirement from the Air Force, Mike decided to pursue an Operations and Management degree at the Golf Academy of America-Dallas.


His mindset for attending the Golf Academy was to study business fundamentals so that he could gain leverage for his next venture all while partaking in his love for golfing. Throughout his studies, Mike was the black sheep, formulating how to open a jerky storefront while everyone else was competing for careers in the golf industry. He stood firm by his aspirations, graduated in 2019, and went on to purchase and transform a small café in Wolfe City, Texas into his first jerky storefront/BBQ restaurant.


Today, Mike and his successful business are thriving. He thoroughly enjoys giving back to the community and making a difference in the lives of others. From his delicious smoked BBQ sandwiches and famous jerky offerings, Mike has been able to leave an incredible mark in the food industry and is planning on expanding his business even more in the near future.
